SYDNEY BAKER TO THE STARS REVEALS HER CUPCAKE RECIPE (AND IT'S DELICIOUS!)
The Sydney baker who created cakes for Taylor Swift, Harry Styles and Ed Sheeran has shared the secret to crafting the fluffiest cupcakes at home. Gabriela Oporto, owner of Bakealicious by Gabriela, reveals her delectable cupcake recipe - and a few baking secrets too!
Gabriela’s Famous Vanilla Cupcakes
Vanilla Cupcakes
2 cups Caster Sugar
115g Butter, unsalted
4 Eggs
2 cups Self-Raising Flour, sifted
1 cup Milk
Method:
1. Place butter and sugar in a bowl and mix with a paddle attachment until light and fluffy. Slowly add eggs, one at a time. Mix until well combined and colour has become lighter.
2. Add half the sifted flour and mix on low speed, then alternate with half of the milk. Repeat with remaining flour and milk. Make sure you do not over-mix the batter at this stage. Once all combined and without any lumps it’s ready.
3. Line a cupcake tray with cupcake holders and place batter using a spoon until three-quarters of the way.
4. Bake at 180°C/160°C fan forced for 15/20 minutes. You can check if they are ready by inserting a skewer in the centre. It has to come out clean.
5. Put aside so they can cool down.
Easy Buttercream Icing recipe
250g Butter, unsalted
4 cups Icing Sugar, sifted
1 tbsp Vanilla Extract
4 tbsp Milk or Cream
Method:
1. Place butter in a bowl and mix with a handheld mixer until light and cream. For those who have stand mixers, I recommend a paddle attachment.
2. Slowly add icing sugar and mix until the sugar has dissolved. You can test this by putting some between your fingers. If you still feel it is grainy, continue mixing.
3. And lastly add vanilla extract and milk. Mix until all combined
Where do people go wrong when making cupcakes?
They don’t mix the butter and sugar long enough.
They don’t add eggs slowly enough.
They over-mix the batter once they start adding the flour.
They don’t bake them straight away.
Tips for the fluffiest Vanilla cupcakes
Beat butter and sugar for a long time until colour has changed.
Add eggs one at a time.
Do not over-mix once you add the flour.
Once the batter is ready you must bake it straight away. If you let it rest cupcake will be dense
