Banana Vanilla Pancake
Gluten free, dairy free option
1 medium (100g) banana
1 scoop (30g) vegan vanilla protein powder
1 large (51g) egg
¼ tsp vanilla extract
¼ tsp cinnamon
2 tsp (10ml) unsweetened almond milk
1 tsp (5g) coconut oil
2 tbls (30g) high protein yogurt
Cut a few thin slices of banana and reserve for topping.
Mash banana well with a fork.
Add egg, cinnamon, vanilla, protein powder, and milk. Whisk to combine.
Heat oil in a non-stick frypan on medium.
Pour in pancake batter, either as a whole large pancake, or 2-4 smaller ones.
Cook for 2-3 minutes or until bottom of pancake is set. Flip and cook for a further minute.
Serve on a plate and top with banana and yogurt.
Tips: Omit yogurt for dairy free or swap yogurt for coconut or almond yogurt.
