Greek yoghurt brownies

Greek Yoghurt Brownies


Prep time: 10 minutes

Cooking time: 20 minutes

Serves: 9


Ingredients


  • 1/4 cup extra virgin olive oil

  • 1/4 cup canola oil

  • 3/4 cup caster sugar

  • 2 eggs, lightly whisked

  • 1 tsp vanilla extract

  • 1/2 cup flour

  • 1/2 cup cocoa

  • 1/2 cup Greek yoghurt

  • 100g dark chocolate, chopped

  • ½ cup walnuts, chopped (optional)


Method


  1. Preheat the oven to 180 degrees C. Grease and line a 20cm x 20cm slice tin.

  2. Whisk oils, sugar, eggs and vanilla in a medium bowl until well combined.

  3. Sift over flour and cocoa and stir to combine.

  4. Add the Greek yoghurt, chocolate and walnuts (if using) and stir until just combined.

  5. Pour mixture into prepared tin and bake for 15-20 minutes or until a skewer inserted in the middle come out clean.

  6. Allow to cool slightly before cutting into squares.
