Gin lovers, take note. One of Australia’s most awarded distilleries, Never Never, has just unveiled a sleek new bottle design and a larger 700ml format — and it’s rolling out first across its flagship range, including the cult-favourite Oyster Shell Gin.
Described by bartenders as the secret weapon for savoury martinis, the Oyster Shell Gin is already beloved for its salinity, wax flower aromatics and clean, coastal finish.
Now, with more in the bottle and a bolder look to match, it’s the perfect excuse to lean into the martini revival, especially if you like yours with a briny edge.
Never Never’s Brand Director and co-founder Sean Baxter says the move to a bigger, better bottle is about showing up the way the product deserves to.
“It’s still got all the personality bartenders love, just with more to pour and a look that matches the quality of what’s inside,” Baxter says.
THE OYSTER SHELL GIN MARTINI
Want to try the gin at its best? Skip the dirty martini — this is the salty sip you didn’t know you needed.
Ingredients
• 70mL Oyster Shell Gin
• 10mL Dry Vermouth
• Lemon twist to garnish
Method
Add gin and vermouth to a mixing glass, add ice and stir well.
Strain into a chilled martini glass and garnish with a lemon twist.
For extra finesse, freeze the bottle 30 minutes beforehand and serve with a freshly shucked local oyster.
Enjoy!
Savvy, sophisticated and distinctly Australian, the Oyster Shell Martini is a masterclass in minimalist indulgence.
The gin’s subtle salinity plays beautifully with lemon and vermouth, making it a go-to for anyone who leans dry when it comes to cocktails.
The larger 700ml format will roll out nationally from June 2025, starting with the Triple Juniper, Ginache and Oyster Shell expressions, with the rest of the range to follow later this year.
So if you’ve ever needed a reason to put your shaker to work (or finally buy a proper mixing glass), this might just be it.
Take a sip. Step into the Never Never.
