4 salmon fillets1 large sweet potato, peeled and cubed
2 cups of broccoli florets
2 tablespoons of olive oil
Salt and pepper to taste
1 lemon, sliced
Preheat the oven to 400°F (200°C).
Place the salmon fillets on a baking sheet lined with parchment paper.
Season the salmon with salt and pepper, and top with lemon slices.
In a separate bowl, toss the sweet potato and broccoli with olive oil, salt, and pepper.
Spread the vegetables evenly around the salmon fillets on the baking sheet.
Bake for 15-20 minutes, until the salmon is cooked through and the vegetables are tender.
